Steak Loaded Baked Potato

Ingredients
For the Baked Potatoes
4 large russet potatoes
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
For the Steak
1 lb (450 g) sirloin steak, cut into bite-size pieces
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic, minced
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
For the Toppings
1 cup shredded cheddar cheese
½ cup Monterey Jack cheese
4 slices crispy bacon, chopped
2 green onions, finely sliced
Creamy Cheese Sauce
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
½ cup shredded cheddar cheese
¼ cup cream cheese
¼ teaspoon garlic powder
Salt and black pepper to taste
Instructions

  1. Bake the Potatoes
    Preheat your oven to 425°F (220°C).
    Wash and dry the potatoes thoroughly. Pierce each potato several times with a fork.
    Rub the potatoes with olive oil and season generously with salt and black pepper.
    Place them directly on a baking sheet and bake for 55–65 minutes, or until the skin is crispy and the inside is completely tender.
  2. Cook the Steak
    While the potatoes are baking, season the steak pieces with smoked paprika, onion powder, salt, and black pepper.
    Heat olive oil in a large skillet over medium-high heat.
    Add the steak and sear for 2–4 minutes per side, depending on the size of the pieces and your preferred doneness.
    Add the butter and minced garlic during the final minute of cooking. Toss the steak until glossy and fragrant.
    Remove from the heat and let it rest for a few minutes.
  3. Make the Creamy Cheese Sauce
    Melt the butter in a small saucepan over medium heat.
    Whisk in the flour and cook for about 1 minute.
    Slowly pour in the milk while whisking constantly to prevent lumps.
    Cook for 2–3 minutes, until the sauce begins to thicken.
    Reduce the heat and stir in the cheddar cheese and cream cheese until completely melted and smooth.
    Season with garlic powder, salt, and black pepper.
  4. Load the Potatoes
    Remove the baked potatoes from the oven and carefully cut a deep slit lengthwise through the center.
    Gently squeeze the sides to open the potato.
    Fluff the inside with a fork.
    Add a little cheddar and Monterey Jack cheese inside each potato and let it melt.
    Top generously with the seared steak and crispy bacon.
    Pour the warm creamy cheese sauce over everything and finish with sliced green onions.
  5. Final Touch
    For an extra-melty, restaurant-style finish, place the loaded potatoes under the broiler for 1–2 minutes, watching carefully until the cheese is bubbling and golden.
    Serve immediately while hot.
    The result: a crispy baked potato loaded with fluffy potato, juicy steak, crispy bacon, and rich, creamy melted cheese — an incredibly satisfying comfort-food meal.
