6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 tablespoon unsalted butter
4 cloves garlic, minced
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
3–4 sprigs fresh rosemary
1 tablespoon chopped fresh parsley
Instructions
Prepare the chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper, smoked paprika, and Italian seasoning.
Sear the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and cook for 5–7 minutes, until the skin is deeply golden and crispy. Flip and cook for another 3 minutes.
Make the glaze: Reduce the heat to medium. Add the butter and minced garlic. Cook for about 30 seconds, then add the honey, soy sauce, Dijon mustard, and lemon juice. Stir everything together until the sauce becomes glossy.
Add rosemary: Place the fresh rosemary sprigs around the chicken. Spoon the honey-garlic glaze generously over the chicken thighs.
Finish cooking: Transfer the skillet to a preheated 400°F (200°C) oven and bake for about 20–25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
Baste and serve: Remove from the oven and spoon the delicious pan juices and glaze over the chicken. Let it rest for 5 minutes, then sprinkle with fresh parsley.
Serve: Serve hot with roasted potatoes, white rice, mashed potatoes, or your favorite vegetables. The result is juicy, tender chicken with crispy caramelized skin and an irresistible sweet-and-savory glaze.
