- 1 large egg
- 1 tablespoon hot sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
For the crispy coating:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper
- ½ teaspoon baking powder
For the slaw:
- 2 cups shredded cabbage
- ½ cup shredded carrots
- ¼ cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and black pepper to taste
For serving:
- 4 brioche buns
- Dill pickle slices
- Mayonnaise or spicy sauce
- Vegetable oil for frying
- French fries
Instructions
Place the chicken thighs on a cutting board and gently pound the thicker parts so they cook evenly. In a large bowl, combine the buttermilk, egg, hot sauce, salt, black pepper, garlic powder, and paprika. Add the chicken and make sure every piece is completely coated. Cover and refrigerate for at least 2 hours, or overnight for even more flavor.
While the chicken marinates, prepare the creamy slaw. Combine the shredded cabbage and carrots in a bowl. Add mayonnaise, apple cider vinegar, honey, salt, and black pepper. Mix well until everything is evenly coated. Refrigerate until ready to serve.
For the crispy coating, combine flour, salt, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and baking powder in a large bowl.
Remove one piece of chicken from the marinade and allow the excess to drip off. Press it firmly into the seasoned flour, making sure the entire surface is covered. For an extra-crispy crust, dip it back into the buttermilk mixture and then coat it in the flour a second time. Repeat with the remaining chicken.
Heat about 1½ inches of vegetable oil in a heavy skillet or Dutch oven to approximately 350°F (175°C). Carefully place the chicken into the hot oil without overcrowding the pan. Fry for about 5–7 minutes per side, depending on thickness, until deeply golden brown and the chicken reaches 165°F (74°C) internally.
Transfer the fried chicken to a wire rack to drain. Avoid placing it directly on paper towels for too long, because the bottom can become soggy.
Toast the brioche buns lightly in a skillet until golden. Spread mayonnaise or your favorite spicy sauce on the bottom bun. Add a piece of crispy fried chicken, a generous spoonful of creamy slaw, and several crunchy pickle slices. Finish with the top bun.
Serve immediately with hot, seasoned French fries.
The result: a crispy, juicy, flavorful chicken sandwich with creamy slaw, tangy pickles, and a buttery brioche bun—the kind of homemade American sandwich that tastes like it came straight from your favorite chicken spot.
