Authentic Italian Porchetta — Crispy on the Outside, Juicy and Tender on the Inside

Use a sharp carving knife to slice through the crispy outer skin and the tender meat beneath.
Each slice should reveal the rolled layers, aromatic herbs, rendered fat, and succulent interior. The contrast between the crunchy skin and the softer meat is what makes porchetta so special.
Arrange the slices on a warm serving platter and spoon a little of the strained roasting juice over the meat, keeping most of the crispy skin dry.
For an extra-rich finish, serve some of the flavorful pan juices on the side.

Step 9: Serve your Italian porchetta

Roast slowly, then finish hot. Gentle cooking develops tenderness, while high heat creates the crunchy crust.
Keep the crackling dry. Moisture and trapped steam can make the skin soft.
Rest before slicing. This makes carving easier and helps retain the meat’s juices.
Use a thermometer. Cooking time varies significantly with the roast’s weight, diameter, and the type of pork used.
Storage and reheating
Refrigerate leftovers within two hours of cooking in a covered container and use them within 3–4 days. For longer storage, freeze portions in airtight packaging.
Reheat slices until steaming hot throughout. To restore the crispy skin, finish them in a hot oven or air fryer, keeping a close eye on the crackling. Microwaving alone tends to soften the skin.
Final result: A beautiful Italian-style porchetta with deeply golden crackling, tender herb-seasoned pork, and rich natural juices in every slice — perfect for a family gathering, a festive dinner, or an impressive homemade sandwich.
