Beef with Caramelized Onions & Golden Raisins

Ingredients:
2 lbs beef stew meat, cut into bite-sized pieces
2 large onions, thinly sliced
4 cloves garlic, minced
¾ cup golden raisins
2 tbsp olive oil
1 tsp ground cumin
1 tsp paprika
½ tsp black pepper
½ tsp ground ginger
1 tsp salt
2 cups beef broth
1 tbsp honey
1 tbsp fresh lemon juice
2 tbsp fresh parsley, chopped
Instructions:
Heat the olive oil in a large heavy pot over medium-high heat. Season the beef with salt, pepper, cumin, paprika, and ginger.
Add the beef to the pot and sear for a few minutes on each side until nicely browned.
Add the sliced onions and minced garlic. Cook for 5–7 minutes, stirring occasionally, until the onions begin to soften and caramelize.
Pour in the beef broth and add the honey. Stir well, scraping the flavorful browned bits from the bottom of the pot.
Cover the pot and reduce the heat to low. Let the beef simmer gently for about 1½–2 hours, or until the meat is very tender.
Add the golden raisins during the last 20–25 minutes of cooking so they become soft and soak up the delicious sauce.
Stir in the lemon juice and taste. Adjust the salt and pepper if needed.
Transfer the tender beef, caramelized onions, and golden raisins onto a serving plate. Spoon the rich sauce over the top and garnish with fresh parsley.
Serve hot with warm bread, rice, mashed potatoes, or roasted vegetables.
