Ingredients
For the Meatloaf Bites
1 lb (450 g) ground beef, preferably 80/20
8 slices bacon
4 oz (115 g) sharp cheddar cheese, cut into small cubes
1/3 cup breadcrumbs
1 large egg
1/4 cup finely chopped yellow onion
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
For the BBQ Glaze
1/2 cup BBQ sauce
1 tablespoon ketchup
1 teaspoon Worcestershire sauce
1 teaspoon honey or brown sugar
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
A pinch of black pepper
For Garnishing
Fresh parsley, finely chopped
A little extra BBQ sauce for serving
Instructions
- Prepare the Meat Mixture
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, egg, finely chopped onion, minced garlic, Worcestershire sauce, smoked paprika, black pepper, and salt.
Using clean hands or a large spoon, gently mix everything together until the ingredients are evenly incorporated.
Be careful not to overmix the meat, as this can make the finished meatloaf bites dense instead of tender. - Prepare the Cheddar
Cut the cheddar cheese into small cubes.
The cubes should be small enough to fit comfortably inside each meatloaf bite while leaving enough meat around the cheese to completely seal it in. - Form the Meatloaf Bites
Take a portion of the meat mixture and flatten it slightly in the palm of your hand.
Place one cube of cheddar in the center.
Carefully fold the meat around the cheese and gently roll it between your hands until you have a compact meatball-like shape.
Make sure the cheese is completely covered with meat. Any exposed cheese may leak out during baking.
Repeat with the remaining meat mixture and cheddar. - Wrap With Bacon
Cut the bacon slices in half if necessary.
Wrap one piece of bacon around each meatloaf bite, making sure the bacon overlaps slightly.
Place each bacon-wrapped bite seam-side down in a baking dish, cast-iron skillet, or oven-safe pan.
Leave a little space between each piece so the heat can circulate properly. - Make the BBQ Glaze
In a small bowl, combine the BBQ sauce, ketchup, Worcestershire sauce, honey or brown sugar, smoked paprika, garlic powder, and black pepper.
Mix until smooth and well combined.
Set the glaze aside. - Bake
Place the meatloaf bites in the preheated oven and bake for approximately 25–30 minutes.
The bacon should begin to brown and become crispy, while the beef cooks through.
For food safety, cook the ground beef to an internal temperature of 160°F (71°C) measured in the center of the meatloaf bites. - Add the BBQ Glaze
Remove the pan from the oven.
Using a pastry brush, generously coat each meatloaf bite with the BBQ glaze.
Make sure the sauce covers the bacon and the top of each bite.
Return the pan to the oven and bake for another 5–8 minutes, allowing the BBQ sauce to become sticky, glossy, and caramelized.
For an even more caramelized finish, you can briefly place them under the broiler, watching them closely so the sauce doesn’t burn. - Rest the Meatloaf Bites
Remove the finished meatloaf bites from the oven and let them rest for about 5 minutes.
This gives the juices time to settle and allows the melted cheddar inside to cool slightly while remaining deliciously gooey. - Serve
Transfer the meatloaf bites to a serving platter.
Drizzle or brush them with a little extra BBQ sauce and sprinkle with freshly chopped parsley.
For the best presentation, cut one meatloaf bite in half and place it in the center of the platter so the melted cheddar is visible.
Serve warm while the cheese is still soft and gooey.

Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
To reheat, place them in a preheated 350°F (175°C) oven until heated through. You can also use an air fryer to help the bacon become crispy again.
Avoid overheating them, because the cheddar can become very runny and the meat can dry out.
Tip: For the most impressive cheese pull, serve these immediately after resting and cut one open while it’s still warm.
