2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
1/4 teaspoon salt
For the Cheesecake Filling
32 oz (900 g) full-fat cream cheese, softened
1 1/4 cups granulated sugar
4 large eggs, room temperature
1 cup sour cream
2 teaspoons pure vanilla extract
2 tablespoons all-purpose flour
1/4 teaspoon salt
For the Caramel Pecan Topping
1 1/2 cups chopped pecans
1 cup caramel sauce
2 tablespoons unsalted butter
2 tablespoons brown sugar
1/2 teaspoon vanilla extract
Pinch of salt
For the Chocolate Drizzle
4 oz (115 g) semi-sweet or dark chocolate
2 tablespoons heavy cream
Instructions
- Prepare the Crust
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and salt. Mix until all the crumbs are evenly coated and the mixture resembles wet sand.
Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a glass or measuring cup to create a firm, even crust.
Bake for approximately 8–10 minutes, then remove from the oven and allow the crust to cool slightly. - Make the Cheesecake Filling
Reduce the oven temperature to 325°F (165°C).
Place the softened cream cheese and sugar into a large mixing bowl. Beat on medium-low speed until the mixture becomes smooth and creamy.
Add the eggs one at a time, mixing gently after each addition. Do not overbeat the mixture.
Add the sour cream, vanilla extract, flour, and salt. Mix just until everything is incorporated and the filling is completely smooth. - Fill the Pan
Pour the cheesecake batter slowly over the cooled crust.
Gently tap the pan against the counter a few times to release any large air bubbles. Smooth the surface with a spatula.
Wrap the outside of the springform pan tightly with aluminum foil to help prevent water from entering during the water bath. - Bake the Cheesecake
Place the cheesecake pan inside a larger roasting pan.
Pour hot water into the roasting pan until it reaches about halfway up the sides of the cheesecake pan.
Bake for approximately 60–75 minutes, or until the edges are lightly golden and the center still has a gentle jiggle.
Turn off the oven, slightly open the oven door, and allow the cheesecake to cool inside for about one hour.
Remove it from the water bath and allow it to cool completely at room temperature.
Refrigerate for at least 6 hours, preferably overnight. - Prepare the Caramel Pecans
Place the chopped pecans in a skillet over medium heat and toast them for a few minutes until fragrant.
Add the butter, brown sugar, caramel sauce, vanilla extract, and a small pinch of salt.
Stir gently until the pecans are completely coated in the warm caramel mixture.
Allow the mixture to cool slightly before topping the cheesecake. - Decorate the Cheesecake
Carefully remove the chilled cheesecake from the springform pan and place it on a serving plate.
Spoon the caramel pecan mixture generously over the top.
Allow some of the caramel to naturally drip down the sides of the cheesecake. - Add the Chocolate Drizzle
Melt the chocolate with the heavy cream until smooth and glossy.
Drizzle the melted chocolate over the caramel and pecans in thin, beautiful lines.
Let some chocolate naturally run down the sides for that rich bakery-style appearance. - Serve
Refrigerate the cheesecake for another 20–30 minutes to allow the topping to set slightly.
Use a sharp knife to cut clean slices.
For the best presentation, serve each slice chilled or allow it to sit at room temperature for about 10 minutes before serving.
The finished cheesecake should have a crisp buttery crust, smooth creamy cheesecake filling, rich caramel, crunchy toasted pecans, and a glossy chocolate drizzle.
Enjoy this incredibly rich and indulgent homemade cheesecake! 🍰🥜🍫
