Herb-Roasted Garlic & Thyme Chicken

Ingredients
For the Chicken:
1 whole chicken, about 4–5 pounds
3 tablespoons unsalted butter, softened
2 tablespoons olive oil
5–6 cloves garlic, finely minced
1 tablespoon fresh thyme leaves
1 teaspoon dried rosemary
1 teaspoon smoked paprika
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
1 lemon, halved
For the Roasting Pan:
1 large yellow onion, cut into wedges
1 whole garlic bulb, cut in half horizontally
4–5 fresh thyme sprigs
1 cup chicken broth
½ cup dry white wine or additional chicken broth
2 tablespoons olive oil
Salt and black pepper, to taste
Instructions

  1. Prepare the Chicken
    Preheat your oven to 425°F (220°C).
    Remove the chicken from its packaging and pat it completely dry with paper towels. Drying the skin well is important because it helps the chicken develop that beautiful crispy, golden-brown exterior.
    Place the chicken breast-side up on a roasting rack or directly into a large roasting pan.
  2. Make the Herb Butter
    In a small bowl, combine the softened butter, olive oil, minced garlic, fresh thyme, rosemary, smoked paprika, salt, black pepper, onion powder, and garlic powder.

  5. Baste the Chicken
    During roasting, carefully spoon some of the pan juices over the chicken once or twice.
    This helps keep the surface flavorful and gives the skin an even deeper golden-brown color.
    If the skin becomes too dark before the chicken is fully cooked, loosely cover the top with aluminum foil and continue roasting.
  6. Let the Chicken Rest
    Once the chicken reaches the proper internal temperature, carefully remove it from the oven.
    Transfer it to a cutting board and let it rest for 15–20 minutes before carving.

    Finally, remove the wings at the shoulder joint.
