Servings: 6
Prep Time: 15 minutes
Cook Time: 50–60 minutes
Total Time: About 1 hour 15 minutes
Ingredients
10–12 chicken drumsticks
1½ lb baby potatoes, halved if large
4–5 carrots, cut into chunks
4 cloves garlic, minced
3 tbsp olive oil
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp paprika
1 tsp dried Italian seasoning
1 tsp garlic powder
½ tsp onion powder
1 tsp salt
½ tsp black pepper
½ cup chicken broth
1 tbsp Worcestershire sauce
Fresh parsley, for garnish
Instructions
Preheat the oven to 425°F (220°C).
Prepare the chicken marinade.
In a small bowl, combine the olive oil, honey, Dijon mustard, minced garlic, paprika, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Mix well.
Season the chicken.
Pat the chicken drumsticks dry with paper towels. Rub the seasoning mixture generously over every piece of chicken.
Prepare the vegetables.
Place the baby potatoes and carrots in a large baking dish. Add a little olive oil, salt, and pepper, then toss to coat.
Arrange everything.
Place the seasoned chicken drumsticks over the potatoes and carrots.
Add the cooking liquid.
Mix the chicken broth with Worcestershire sauce and pour it carefully around the chicken and vegetables, avoiding pouring directly over the chicken skin.
Bake.
Place the dish in the preheated oven and bake uncovered for about 45–55 minutes, or until the chicken is deeply golden and reaches an internal temperature of 165°F (74°C).
Make it extra golden.
For a beautifully caramelized finish, turn the oven to broil for the last 2–3 minutes, watching carefully so the chicken doesn’t burn.
Rest the chicken.
Remove the dish from the oven and let the chicken rest for 5–10 minutes. Spoon some of the flavorful pan juices over the chicken and vegetables.
Serve.
Transfer the roasted chicken to a serving platter. Place the potatoes and carrots on a separate dish or arrange them around the chicken. Drizzle with some of the pan sauce and sprinkle with fresh parsley.
Serve hot and enjoy this comforting homemade chicken dinner with your family!
